Each piece of sushi is appropriately sized, with balanced flavors and undeniable freshness. For those wanting to try different dishes, Mr. Saito recommends the Omakase sashimi set with a few additional pieces of sushi, along with some seasonal small plates, like the recently available vinegared cod milt, miso-marinated black cod, or the popular radish oden. The total bill would only be a few hundred dollars, leaving you with enough to take a trip back to the countryside. Deer Alley, a small shop in Sai Wan Ho, specializes in a series of Japanese home-style dishes, including curry rice and beef rice, many of which are home recipes from the owner and head chef, Ah Luk. Ah Luk loves cooking and learned from family members. At 20, he went to France to study cooking, not to become a chef, but because he didn’t want to eat bad food. Especially notable is the consistently available Japanese sweet curry. Ah Lu laughs and says he has been eating it since he was four, so he can make it with his eyes closed! He is a native Hongkonger, and due to his family ties to Japan, this sweet curry recipe has been passed down for decades. He explains that many Japanese home curries are sweet, and his family’s method doesn’t use beef or chicken to make the broth; instead, it simmers apples, peaches, onions, carrots, and honey for four hours to create a vegetable broth that is sweet and refreshing, before adding fruity curry bricks. The curry is also best when left overnight, as it tastes even better the next day. No wonder he says the best and most recommended dish is a simple bowl of curry rice, even with different ingredients like seared spiced duck breast or freshly fried chicken balls.
