Cheese and Cream Cake. Step-by-step recipe. Maybe many of you shy away from sponge cake dough because it is demanding and difficult to make. This Cheese and Cream Cake recipe is simple, affordable, and easy to make. You just have to mix the ingredients and get a dessert with minimal effort. You can prepare it at any time of the year when you crave something good with cheese, a cheesecake. Ingredients and recipe: Grease a 23 cm diameter pan with a little vegetable oil. Line the pan with baking paper and grease the bottom and walls of the pan with butter. Preheat the oven to 160˚C, top and bottom heat, without ventilation. 900 g well-drained cottage cheese (preferably 9% fat) Eggs – 5 pieces (size L) Salt – 3 g Sugar – 160 g Lemon juice – two teaspoons Vanilla extract - ½ teaspoon (2.5 ml) or a packet of vanilla sugar (8 g) Super-concentrated rum essence – ½ teaspoon (2.5 ml) or a teaspoon of regular rum essence Grated lemon and orange peel – one tablespoon Heavy cream (20 ÷ 30% fat) – 160 g Flour – 40 g Cornstarch – 40 g Raisins – 60 g Cranberries – 60 g Icing sugar – one tablespoon Put 900 g of cottage cheese in a large bowl and crumble with a fork. Add 5 egg yolks, a pinch of salt (3 g), half the sugar (80 g) and a teaspoon of lemon juice. Mix a little. Add 1/2 teaspoon of vanilla extract or a packet of vanilla sugar and ½ teaspoon of super-concentrated rum essence or a teaspoon of regular rum essence. Add a tablespoon of grated lemon and orange peel. Mix the composition a little. Add 160 g of heavy cream (20-30% fat). Mix the composition. Mix the composition with a mixer or a spoon. Add 40 g of flour and 40 g of cornstarch. Mix with a spatula then mix until we obtain a homogeneous composition. Add 60 g raisins and 60 g cranberries, just washed and well drained. If you don't like raisins, you can choose dried apricots, or chocolate chips. In another, smaller bowl, beat 5 egg whites until foamy, with a mixer or a whisk. Add the other half of the sugar - 80 g and a teaspoon of lemon juice. Beat the egg whites until stiff. Gradually add the egg whites to the previously prepared yolk mixture. Mix gently with a spatula or a whisk, by turning from the bottom up, but not too much. Pour the mixture into the baking tray lined with baking paper and greased with butter. Level the mixture with the spatula. Tap the tray on the worktop 3-4 times. Optionally, garnish with raisins. Place the pan immediately in the preheated oven for one hour and forty minutes. Do not open the oven door for the first 25 minutes. After an hour, if the cheesecake is too browned, cover it with baking paper. Remove the pan from the oven and let it cool for one hour. Then remove the pan ring and let the cheesecake cool for 4 ÷ 6 hours. Optionally, dust the cheesecake with powdered sugar. I hope you like this recipe and that you enjoy preparing it!
