If you enjoy easy homemade cakes, don’t forget to like, comment, and subscribe to my channel for more delicious recipes 😊 ⸻ Ingredients • 200g butter, softened • 200g caster sugar • 200g self-raising flour • 150g ground almonds • 3 eggs • 1 tsp vanilla extract • 200g raspberry jam • 3 tbsp flaked almonds • Icing sugar, for dusting 22cm fluted Bundt cake tin (from Lidl) ⸻ Method 1. Preheat oven to 170°C. Grease the Bundt tin well with butter, sprinkle with flaked almonds, and dust lightly with flour. 2. Beat butter and sugar together for 2–3 minutes until pale and creamy. 3. Add the eggs one at a time, mixing well after each addition. 4. Add the flour and mix lightly, then gently fold in the ground almonds and vanilla extract using a spatula. Do not overmix. 5. Spoon the batter into the prepared tin, layering with raspberry jam and spreading gently. 6. Bake for 45–60 minutes, or until a skewer inserted comes out clean. 7. Allow the cake to cool in the tin for 10 minutes, then turn out onto a serving plate.
