Ingredients (Serves 2–3): 1 cup basmati or long grain rice (washed & soaked 15 mins) 1 medium potatoe (peeled & diced) 1 cup cooked or canned chickpeas (drained & rinsed) 1 medium onion (sliced) 2 garlic cloves (minced) 1/2 tsp turmeric 1 tsp red paprika (optional) 1 tsp red coriander powder (optional) Salt to taste 2–4 tbsp oil 2 cups water Fresh coriander or parsley (for garnish) 1 tbsp lemon juice 🍽️ Instructions: 1. Heat oil in a pan over medium heat. Add diced potatoes and fry until golden and crispy (about 7–10 minutes). Remove and set aside. 2. In the same pan, add sliced onions and cook until golden. Add minced garlic and sauté for 1 minute 3. Stir in turmeric, paprika (if using), and coriander powder. Add chickpeas and cook for 2 minutes to coat them in the spices. 5. Fluff the rice, add fried potatoes back in, and mix gently.
