Delicious and hearty homemade chicken and dumplings using Cheddar Bay Biscuit mix for dumplings. Dumplings: 1 box Red Lobster Cheddar Bay Biscuit Mix 2 tbsp melted butter 1/4 cup water 1/2 cup shredded sharp cheddar cheese 1 large egg Chicken and Vegetables: 4-5 cups chopped or shredded cooked chicken 1 large onion, chopped 1 lb bag of carrots, peeled and chopped into small pieces 3 stalks of celery, chopped 2 tbsp butter 1 tbsp olive oil 7 cups chicken broth 1 tbsp poultry seasoning 1 tbsp dried thyme 2 bay leaves Salt and pepper to taste Make up your dumplings by adding both packages from the box of Cheddar Bay Biscuit mix into a bowl along with all the other ingredients listed above. Cover and put in refrigerator. Heat oil and butter in a dutch oven on medium high heat. Add onion, celery and carrots. Sauté until starting to get soft - about 5-10 minutes. Add broth, seasonings, and chicken. Cover and simmer for 10-15 minutes until vegetables are tender. Remove lid and turn heat down to medium. Break off small pieces of your biscuit dough and roll into a ball and drop into broth. These will puff up so make them fairly small. Try not to stack or overlap them. Once you have all the biscuit dough dropped into broth, lightly push them down into the broth. Do not stir! They will fall apart. Cover and let simmer for about 15 minutes until the dumplings are done. Once done, carefully stir the dumplings around. The starch from dumplings will help thicken your broth. Serve in bowl with some fresh parsley on top. Enjoy!
