Ingredients for this incredibly easy recipe: WATER ROUX (to use in main dough) 25g bread flour, sieved 100ml water DOUGH 300g bread flour, sieved 50g sugar Water roux (from above) 1 medium egg 70ml water, room temperature 20ml vegetable oil 6g instant yeast COCONUT FILLING 1 medium egg 25ml vegetable oil 40g sugar 80g desiccated coconut/flakes PIPING 30g unsalted butter, melted 20g plain flour, sieved 10g sugar EGG WASH 1 medium egg 1 tablespoon water I hope you enjoy this video of how to make "gai mei bao", the delicious traditional Hong Kong Chinese cocktail bun with a scrumptious coconut filling from the comfort of your own kitchen! Even though this recipe uses a breadmaker - the Morphy Richards Fastbake - you could easily use your stand mixer and then prove separately instead. Or you might prefer to knead by hand. Either alternative would work perfectly fine with this recipe. It's very simple to make these gai mei bao at home. For me, it brings back the nostalgia of eating lots of authentic gai mei bao from Hong Kong bakeries when I visited with my parents many times as a child.
