Nothing beats the sweet and crunchy taste of this Sweet Pickle recipe. Handed down from my MIL, this recipe is at least 60 years old and is a simple and delicious way to use up that abundance from the cucumber trellis. Sweet Crock Pickles (this is exactly how the recipe was written for me) 6 quart basket small cucumbers Scrub clean, wipe dry. Slice and put in large dish Sprinkle 2/3 cup pickling salt well through pickles Cover with boiling water. Leave overnight Remove from brine and wipe dry. Place in crock Mix: 1/2 gallon (8 cups) white vinegar 4 tsp dry mustard 4 tbsp salt 4 tbsp sugar Bring to a boil Put 1/2 cup mixed pickling spice in cheesecloth and put on top of pickles Pour vinegar mixture over, covering all pickles Take 5 lb sugar - add one cup each morning stirring well until all sugar is used Small onions may be added too Enjoy!
