Heat a Dutch oven or cast iron pan and cook the marinated chicken until fully cooked. Remove and set aside. In the same Dutch oven, add chopped onion and sauté until softened. Add chicken curry masala and stir until fragrant. Add tomato paste and cook briefly to remove raw flavor. Use an immersion blender to blend the gravy until smooth. Gradually add heavy whipping cream (about 1–1.5 cups), mixing well. Add sugar, black pepper, chilli, and salt carefully, adjusting after tasting. Return cooked chicken to the gravy and simmer until well combined. Finish with butter (and kasuri methi if using), then turn off heat. 🍽️ Serving Suggestions Serve hot with naan, paratha, or steamed basmati rice Pairs well with a light onion salad or cucumber raita 💡 Home Cooking Notes Dutch ovens retain heat evenly, making them ideal for creamy gravies. Blend the sauce before adding cream for a restaurant-style smooth texture. Sugar should always be adjusted at the end, after tasting.
