These traditional homemade pestiños are a typical fried sweet for Carnival, Easter or Christmas. Today I'll show you how to prepare pestiños with honey or sugar following an easy but very complete recipe, so that your homemade pestiños taste like true glory. As is usual with traditional sweets, it is common to find different variations of the recipe, so mine will be one of the many that exist. Homemade pestiños (Traditional sweet for Carnival, Easter and Christmas). 🛒 Ingredients (30 units approx.): 🔸 300 g of common wheat flour (2 cups / 10.7 oz) 🔹 100 ml of white wine (3.5 oz / ⅓ cup + 1 tbsp) 🔸 100 ml of olive oil (3.5 oz) 🔹 15 ml anise liqueur (optional) (1 tbsp) 🔸 1 teaspoon of anise in grain / matalahúva (1 tsp) 🔹 1 teaspoon of sesame / sesame seeds (1 tsp) 🔸 4 cloves 🔹 A pinch of salt 🔸 1 cinnamon stick 🔹 The peel of 1 orange 🔸 The peel of 1 lemon 🔹 Sugar and cinnamon for 🔸 150 g honey + 30 ml water for the honey coating (½ cup + 2 tbsp) 🔹 Oil for frying 🍳 Easy recipe for honeyed or sugared pestiños, step by step. 1️⃣ Put the olive oil, three pieces of orange peel, three pieces of lemon peel and the cinnamon stick in a medium frying pan. Heat the oil over medium heat until you see the fruit peels fry. Remove from the heat and let the oil cool (warm is enough) 2️⃣ In a small frying pan, toast the anise and sesame seeds over low heat. Put them in a mortar and crush them a little. Crush the cloves in the mortar as well until they turn into powder. 3️⃣ In a large bowl, put the flour, salt, the zest of the rest of the orange and lemon, the anise and sesame seeds and the cloves. Mix everything with a spoon and make a hole in the center. Pour in the wine, anise and the strained oil (either cold or lukewarm). Mix everything with the spoon, stirring from the center outwards. When you see that you can't do it anymore, continue with your hand until everything is very well integrated and knead for about 5 minutes (you can do it inside the bowl or on the work surface). Make a ball with the dough, cover it with cling film and a cloth and let it rest for 30 minutes. 4️⃣ Roll out the dough with a rolling pin until it is very thin (this is very important). Cut circles with a cookie cutter (mine is 9 cm / 3.5 inches in diameter). Bring the ends together in the centre, sticking them together with a drop of water (this way they won't open up when you fry them). While you're making them, place them on a baking tray with baking paper. Let them rest for 10 minutes before frying them. 5️⃣ Put plenty of oil in a medium frying pan and heat it to medium temperature. Add the pestiños and fry them in batches of 9 units, over a low heat (so that they don't brown too quickly on the outside and stay raw on the inside), turning them so that they brown well on both sides. Remove them to a plate with absorbent paper to remove the excess oil. If you want them with sugar and cinnamon, coat them while they're hot. If you want them with honey, let them cool completely first (so that they don't get soft). 6️⃣ In a small saucepan, put the honey and water. Heat it over a low heat, stirring occasionally. When the honey is liquid and hot, dip the pestiños in it, turning them so that they are completely covered. Remove them to a plate to cool again. 👌 Notes for making homemade pestiños: 🍊 This is a recipe that has several ways of being made and all are valid. 🍊 Other ways to shape the pestiños: make balls, stretch them with a rolling pin and shape them.
