Almond Rocher Recipe . Ingredients: Cookies 150g Butter 65g Icing sugar 1 tsp Vanilla extract 125g Flour 70g Corn flour 15g Milk Powder 1 Tbs Matcha Powder (7g) 50g Ground Almond A Pinch of Salt Toasted Almond as needed . Chocolate glaze 250g White chocolate Compound 25g Shortening 1 Tbs Matcha Powder (6g) 1/2 Cup Toasted Almond Nibs (50g) . Instructions: 1. Preheat oven at 165C & line the baking pan with baking paper, set aside. 2. In a bowl, cream butter & sugar together. Then add in vanilla paste. Mix to combine. 3. After that, sift in flour, corn flour, matcha powder, ground almond & salt. Mix until just combine. 4. Take about 1/2 tbs of dough, roll it into ball, then take almond & press it into the dough ball, wrap the almond until completely covered. Place it on the lined baking tray. Repeat until all the dough is finish. 5. Bake it for 20-30 minutes (depends on your oven). After it turn golden brown at the bottom, take out from the oven. 6. Let it cool down on wire wrack. . Matcha Chocolate ganache 1. Add white chocolate & shortening in a bowl together, then melt it using double boiler techniques or microwave. 2.Stir until, melt & mix completely. Add in the almond nibs, stir to combine. 3.Dip the cookies inside the ganache, dunk it until it coat the cookies completely. 4.Take it out, & let it set on wire rack. Repeat for all the cookies. Once set, store it in airtight container.
