Ingredients: Muffins 1 1/2 Cups All-Purpose Flour 1 Teaspoon Baking Powder 1 Teaspoon Baking Soda 1 Teaspoon Cinnamon 1/2 Teaspoon Salt 3 Large Bananas, mashed 3/4 Cup Sugar 1 Egg, beaten 1 Teaspoon Vanilla Extract 1/2 Cup Butter, melted Cinnamon Sugar Topping 1/4 Cup Sugar 1 1/2 Teaspoons Cinnamon Directions 1. Combine the flour, baking powder, baking soda, cinnamon and salt in a medium mixing bowl. 2. In a separate bowl, combine the mashed bananas, sugar, egg, vanilla and butter. 3. Mix together the wet and dry ingredients until incorporated, being careful not to over mix. 4. Place 1/4 cup of batter in each lined or sprayed muffin cup. Mix 1/4 cup of sugar and 1 1/2 teaspoons of cinnamon together in a bow. Sprinkle the mixture over the tops of the muffin batter. 5. Swirl with a toothpick, if desired. 6. Bake at 350 degrees for 15-20 minutes until a toothpick inserted into the center of the muffin comes out clean. Enjoy!
