The Palitaw or Flattened Sweet Rice Cakes are made from glutinous rice flour, salt, and water. The word “Palitaw is from the Filipino word “Litaw” which means to “Float” or “Rise”. The dough are divided, flattened, and cooked in a boiling water. The dough patties are boiled until they float to the top. Floating to the top indicates that the dough is cooked. As a finishing touch, they are coated or dipped in grated coconut (flakes) and topped with toasted sesame seeds and sugar. Many provinces in the Philippines have their version of this delicious and sticky dessert. Some have used different toppings like ground-up nuts and others have used latik sauce (caramelized coconut cream) with coconut milk curds. In this recipe, we will make a classic Palitaw dipped in grated coconuts, topped with toasted cashews, sugar, and toasted sesame seeds. Watch now to learn in how to make it yourself.
