Ingredients 12 cups of shredded zucchini (I used my cheese grater) this needs to be combined with the salt and left for 12-15 hours prior to making the salsa. 4 medium onions 3 large bell peppers 3-4 jalapeno peppers - optional 3-4 garlic clove (I used 2 tablespoons of minced garlic) ¼ cup of salt to be used on the shredded zucchini (I used pickling salt) 6 cups of tomatoes (sliced in quarters) 2 tablespoons of paprika 2 tablespoons of dry mustard 1 tablespoon of garlic powder 1 tablespoon of coriander 1 tablespoon of salt 1 tablespoon of cumin 1 tablespoon of ground pepper 3 tablespoons of sugar 1 cup of white vinegar 1 cup of lemon juice Optional 1 – 2 cans of tomato paste – this depends on the tomatoes you use. I used mainly cherry tomatoes and did not have an excessive amount of juice and didn’t need them. Water bath the jars for 15 minutes once the water is fully boiling.
