Chocolate pudding (makes 1 quart) (Not an USDA approved recipe) Dry ingredients: 1Cup sugar 4 rounded Tablespoons flour (or clear jel) 4 level Tablespoons cocoa powder 1/2 teaspoon sea salt Wet ingredients: 21/2 cups boiling water ( or milk) 1 teaspoon butter 2 teaspoons vanilla ( or desired flavoring extract) Add the water to the dry ingredients in a saucepan. Cook until it starts to thicken and then add the butter and vanilla. Just can it like you would milk. Vent steam for 10 minutes then let the pressure canner come up to 5 pounds pressure (usually 10 for my altitude), turn the canner off. Let the canner completely depressurize and cool to the touch before removing the jars. Next time I will use small jelly jars for personal size servings.
