Summer is here & you are probably looking for easy summer lunches for the kids to eat.Well look no further . . . HELP is here! I am going to be showing you how easy it is and how much of a savings it will save you on that dreaded grocery bill. Whats best it so super easy to can up. You can can up as little or as much as you want in a canning session. Its a stress free recipe too. Now I was raised on this version of spaghetti o's & I also raised all 4 of my children on this version as well. Now a new generation is also being raised up on this version of Spaghetti O's. What I love best about this recipe is a great memory of my Mom. As a kid I really wanted that canned version that the stores were selling. My mom made this recipe ALL the time with elbow noodles. And she would always tell me "If you want them lil O noodles I best get to cutting up those elbow noodles into circles, so I can have those Spaghetti O's." You see my mom did not believe in spending good money on a can of Spaghetti O's. She was brought up making everything from scratch & thats how I was also raised that way as well. To make a long story short I remember my very first shopping experiences as a young adult. I saw that can sitting right there on the grocery shelves right before me. I remember reaching & grabbing a can of those brand name Spaghetti O's putting them in my grocery cart. And when I got back home from grocery shopping I opened up that brand name can & heating them up. Taking that first bite anticipating the goodness to come my way! Boy what a big disappointment. Damn my momma was right! Needless to say I never again bought that store brand. I always made my own from that point on. Then I found out I can can it up myself & have that convenience of having it up on my ~General Store~ aka pantry shelves as well. Now back to my story when my parents came back home here for a visit I served up 2 pints of this to my parents. The look on my moms face was priceless!!!! The laughter coming from my dad & hearing him say . . . "She always told you she was going to have it on day!!! Well today is that day darling." Then after our meal I showed my parents my very well stocked pantry. And then they understood the meaning of me always saying not my mommas canning but my canning!!! She found out that her daughter was a Rebel Canner or what some will also call a Hipster Canner. Well my parents went home with alot of my canned up goodies along with the recipes so they could can up some when these jars became emptied. I still love the memory of hearing my mom say well as a kid she hated canning. Now look at her pantry of all the canned up goodies she has sitting in jars on her pantry shelves that really resembles those ole time General Store shelves. What a beautiful memory I have to cherish. And thats how my "General Store" got its name from . . . . my mom. OK let's get to the recipe . . . . ~REBEL CANNING SPAGHETTI O's~ **WHATS BEST ABOUT THIS RECIPE IS YOU ARE IN CONTROL OF HOW LARGE OR HOW SMALL OF BATCH YOU WANT TO CAN UP . . . YEAH!!!** 1 box of large ring pasta (place slightly less than a 1/2 c ring pasta to each pint canning jar) 1 can of Tomato Soup (again you choose what size of you want to use for your canning session . . . small . . . . family size or restaurant size) 1 can of water of whatever size of tomato soup you are using Mix water & soup up in sauce pan. Bring to simmer. When at a simmer bring over to your canning area. Now get your hot jars from your hot canner. Place some tomato soup in the bottom of your pint jars . . . . thats the size of jar I am canning my Spagetti O's in (or if you choose to can yours in these size jars . . . 1/2 pint or even 4 oz jelly jars. Which are great size for smaller children.) then I place slightly less then a 1/2 c large ring pasta into each pint jar. Then I fill the rest of jar with the soup leaving a 1 inch headspace. De-bubble, wipe rims, place lids & rings onto jars. Place into a hot pressure canner. Lock cover onto pressure canner, vent for 10 minutes, then place canning weight on (10PSI). Bring up to pressure. Pressure can @ 10 lbs of pressure (be sure to can for your proper pressure for your area . . . mine is 10 lbs) & process for 10 minutes. Allow pressure canner to come back down naturally before removing the jars of canned Spaghetti O's. Let jars sit on counter on a towel for 24 hrs undisturbed then wash, dry & label your jars. When ready to eat its just heat & eat baby!!! Enjoy! *** I WANT TO REMIND EVERYBODY TO ALWAYS BE KIND & RESPECTFUL. WE ARE NOT A USDA SITE. SO PLEASE DO NOT QUOTE OR TRASH OTHER PEOPLES METHODS.
