This white and fluffy coconut almond cake is elegant and packed with flavors. Almond sponge cake is soft and moist. The cake layers are frosted with creamy and light frosting with cream cheese and white chocolate and sprinkled with snow like coconut flakes. You will love the flavors. Sponge cake: 7 medium eggs at room temperature Pinch of salt 1 cup sugar (200g) 1 cup all purpose flour (125g) 1 cup almond flour (100g ) 1/2 tsp Vanilla bean paste (8g) Frosting 10 oz cream cheese (280g) 7 oz white chocolate chips (200g) 2 cups heavy cream (500g) 2 cups (or as needed) desiccated coconut (weight varies depending on the shred size) 1/4 cup sugar (30g) Decorating 1/4 cup hazel nuts chopped 6 Coconut balls (recipe link is given below) Separate eggs into whites and yolks. Into whites, add a pinch of salt and beat until stiff. Add sugar little by little and beat until stiff peaks formed. Mix vanilla paste into yolks. Add the mixture into beaten whites and fold. Add almond flour and then all purpose flour into batter and fold. Divide batter into 2 pans lined with parchment paper.. Bake at 345F (175C) for 30 min. Cool to room temperature and flatten the top by removing the dome if necessary. Then slice each cake into two layers. In a large bowl, add cream cheese and mix until smooth. Into a small bowl add white chocolate and microwave for 30 sec. Add melted chocolate into cream cheese. Fold until combined. In another bowl, whip heavy cream to stiff peaks. Gradually add sugar while whipping. Fold whipped cream into chocolate cream cheese mix. Whip with an electric mixer/ beater if necessary. To assemble the cake: place two pieces of parchment paper on the cake stand and place the first cake layer. Spread 1/5 of frosting evenly and sprinkle about 2 tbs desiccated coconut on the top. Repeat the process. With the last layer, add the rest of the frosting on the top and the on sides. Sprinkle desiccated coconut on the top and sides of the cake.
