Septmoncel or Bleu de Septmoncel is a French Cow's milk blue cheese that has a mild flavour and can be matured for as little as two months. I am going to mature my cheese for 3 months so that it has a little kick to it. This cheese is normally made using Penicillium glaucum, but I couldn't find any so the flavour won't be true to type. Ingredients • 10 litres (10 quarts) Partially Skimmed (2%) Cows Milk • 1 litre (1 quart) Whole Goats Milk • 1/8 teaspoon Mesophilic culture • 1/16 teaspoon Penicillium Roqueforti • 3.25 ml (5/8 teaspoon) Calcium Chloride diluted in 60ml cool non-chlorinated water • 3.25 ml (5/8 teaspoon) Liquid Rennet (IMCU 200) diluted in 60ml cool non-chlorinated water • 2 Tablespoons non-iodised salt Please help contribute to translations and subtitles for this video: http://www.youtube.com/timedtext_vide...
