Hello and welcome back to another video!!! Today I would like to share with you, one of my most favorite desserts! Mousse is definitely a number one choice for me. I could probably eat a full cake by myself, which is why I decided to make a healthier version (just in case I do end up eating the full thing)! This recipe is Gluten Free, Vegan and (almost) Paleo. If you want this recipe to become Paleo, simply remove the Vanilla Extract from the base or substitute it for Vanilla Powder. IMPORTANT: For this cake you will need to soak up 2 Cups of Cashews for a minimum of 8 Hours (or overnight), before creating this recipe. This is very important as you need soft cashews to achieve the correct texture of the mousse. For this Vegan Gluten Free Blueberry Mousse, you will need the following ingredients: CRUST INGREDIENTS 3/4 Cups of Dates 1 Cup Almonds 1/4 Cup Coconut Shreds 1 Tsp Vanilla Extract Pinch of Himalayan Salt MOUSSE INGREDIENTS 2 Cups of Cashews (Soak for Min. 8 Hours) 2 Cups Blueberries (Frozen or Fresh - I used frozen in this video) 1/2 Cup Maple Syrup 1/2 Cup of Coconut Milk from a Can (Scoop out and use the thick part) 4 Tbsp of Lemon Juice (Preferably freshly squeezed) DIRECTIONS: 1) Prepare your Spring Form Cake Pan (I used a 10-inch Pan). Either wrap up some Acetate Paper around the walls or oil up the sides with coconut oil! 2) Soak your dates (without the pits), in warm water for 15 minutes. Remove the liquid and blend the dates with the coconut shreds until mixed together. 3) Add the Almonds, Vanilla Extract and Himalayan Salt to the blender and mix. ** NOTE: I like to have big chunks of almonds in my base so if you want everything to be blended very finely, then add the almonds at the bottom of the mixture with the dates (In step 2). ** 4) Press the crust mixture into the bottom of your Pan and set aside 5) Remove water from soaked cashews and wash your cashews 6) Blend all the Mousse Ingredients in a blender (Cashews, Blueberries, Maple Syrup, Coconut Milk, Lemon Juice). The order of adding the ingredients into the blender doesn't matter as much however if you have a weaker blender, add the bigger and harder ingredients first (Ex: Cashews, and Blueberries). Blend until smooth. 7) Pour the Mousse mixture onto the Crust and set the mouse into the refrigerator for 5 hours minimum or over night 8) Once the mousse has formed its shape, remove the walls of the pan (and the acetate paper), decorate as desired and ENJOY!!!
