Doi Machh is a classic Bengali fish curry recipe infused with the subtle lightness of yogurt - that's perfect for those sweltering summer days. Bengali Doi Machh is an insanely easy dish to cook with tender freshwater fish in a yoghurt-based gravy with only a few spices. The delicate and refreshing flavours of Doi Machh have a unique charm. While traditionally prepared with Rohu fish or Rui Machh, it's equally heavenly when made with Catla fish or Katla Machh. 😋 In this video, we will take you through the step-by-step process of creating this iconic Bengali fish curry from scratch.⬇️⬇️ So let’s learn how to make the perfect Bengali style Doi Machh!👇 ➡️ Preparation Time – 10 minutes ➡️ Cooking Time – 20 minutes 🔸️🔸️🔸️Ingredients you’ll need 🔸️🔸️🔸️ 🔸️Rohu Fish – 300 gm (You can also choose Catla Fish for this recipe) 🔸️Black Pepper Powder – 1 tsp 🔸️Cumin Seeds – 1 tsp 🔸️Dry Red Chilli – 1 🔸️Bay Leaf – 1 🔸️Cardamom – 3 – 4 pieces 🔸️Cinnamon – 1 inch 🔸️Onion Paste – ½ cup 🔸️Ginger – Garlic Paste - 1 tbsp 🔸️ Green Chilli Paste – 1 tsp 🔸️ Yogurt – 1 tbsp 🔸️ Black Pepper Powder – 1 tsp 🔸️Salt as per taste 🔸️Vegetable Oil 🔸️🔸️🔸️Cooking Instruction🔸️🔸️🔸️ 🔸️To begin, we'll marinate the fish pieces by sprinkling some Black Pepper Powder and Salt to taste. For the sake of preserving the natural whiteness of yoghurt, we intentionally did not include turmeric powder in our Doi Machh recipe. 🔸️In a pan, heat a sufficient amount of Vegetable Oil and fry the marinated fish pieces over medium heat. Take the pieces out of the pan when they turn golden brown on both sides. 🔸️Put the cumin seeds, dry red chillies, bay leaves, cardamom, cinnamon, and cloves into the same oil one at a time. Sauté the spices for a minute until they become aromatic. 🔸️Then add the tantalizing trio of Onion, Ginger-Garlic, and Green Chilli paste to the sizzling oil. Allow them to sizzle and harmonize for 2-3 minutes, as their enticing fragrance fills the kitchen. 🔸️Now, it's time for some kitchen wizardry! Just cover the pan with a lid and let the self-cooking magic happen for another 4-5 minutes. As the lid works its charm, the flavours get cosy and mingle together, creating a flavourful taste. 🔸️ Now to spice things up sprinkle in a teaspoon of Garam Masala and Black Pepper Powder. Give everything a good mix, making sure those flavours blend together beautifully. 🔸️Next, add some salt to taste and pour in roughly half a cup of water. Let the magic happen as the spices and water come together in a mouthwatering symphony. 🔸️In a separate bowl, it's yogurt time! Take around 1 to 2 tablespoons of yogurt, add a teaspoon of Black Pepper Powder, and give it a whisking like there's no tomorrow. We want that yogurt to be smooth and creamy! 🔸️Now, pour that tantalizingyogurtt into the pan with the masala, combine well and cook for another 3 – 4 minutes. 🔸️At this point, when you see oil oozing out from the edges, you know it’s the signal that the gravy is nearly done. It's time to bring on the star of the show – those crispy fried fish pieces! But before adding the fish, make sure to add a teaspoon of Sugar into the gravy – because Bengali cuisine is incomplete without a pinch of “Mishti” or sweetness. 🔸️Alright, let's bring on the fishy goodness! Add those crispy fried fish pieces to the pan and give them a generous coating with the flavorful gravy. 🔸️Now, here comes the magic touch – drizzle a teaspoon of Desi Ghee from the top. It'll take the dish to a whole new level of richness and taste. Let it cook for another 3-5 minutes and our traditional Doi Machh will be ready.
