Ingredients Biscoff Base: 2 cups crushed Biscoff biscuits ¼ cup caster sugar ⅓ cup unsalted butter, melted Caramel Layer 1 (14 oz) can sweetened condensed milk ½ cup unsalted butter, cut into tablespoon-sized pieces 1 cup packed light brown sugar ¼ cup golden syrup or corn syrup (light or dark) 1 teaspoon vanilla extract ½ teaspoon salt Chocolate Topping 1 ½ cups semisweet chocolate chips ⅓ cup heavy cream Pinch of sea salt (optional, for sprinkling) Instructions Prep the Base 1. In a bowl, mix the crushed Biscoff biscuits with caster sugar and melted butter until the mixture resembles damp, coarse crumbs. 2. Press firmly into a 9x9-inch baking dish lined with parchment paper to create an even layer. 3. Refrigerate while preparing the caramel to allow the base to set. Ma the Caramel 1. In a saucepan over medium heat, combine butter, brown sugar, salt, vanilla, sweetened condensed milk, and golden or corn syrup. 2. Stir continuously as the mixture melts and thickens. 3. Once it starts bubbling, keep whisking until it deepens in color and reaches 225°F(about 5–6 minutes). The caramel should start pulling away from the sides of the pan. 4. Pour the caramel over the chilled base and spread it evenly. 5. Chill for about 10 minutes until the caramel sets. Prepare the Chocolate Topping 1. Chop the chocolate (if using a chocolate bar) and melt it with the heavy cream. You can do this using a double boiler or by microwaving in 20-second bursts, stirring in between. 2. Pour the melted chocolate over the caramel layer and smooth it out evenly. 3. If desired, sprinkle a pinch of sea salt on top for extra flavor. Chil and Serve 1. Refrigerate until the chocolate is fully set, about 1 hour. 2. Once firm, cut into squares or bars and enjoy!
