This video explains the basic operations of electronic nose or e-nose as compared to humans’ olfactory system. E-nose are being used in many fields of science. Lots of research are progressing on the use of e-nose to assess sensory quality as well as food safety. We have explained selected parameters or factors affecting the e-nose signals and their stability. In addition, we have explained how we are planning to use e-nose for assessing microbial spoilage of fish (sardines) during storage at two different temperatures. First e-nose signals will be collected and analyzed over a period of fish storage at selected temperature. The correlations between the sensors will be assessed to determine the sensitivity and specificity of the sensors. In the second stage, we will explore whether e-nose signals could be used to discriminate the fish samples while stored at different periods. In the third stage, we will explore the possible correlations between the types of micro-organisms and their populations with the e-nose signals. In the fourth stage, types and concentrations of the volatiles will be measured by GC/MS and then attempts will be taken to develop their relationships with the e-nose signals.
