You can not measure a speakers impedance with an ohm meter. You can only measure the DC Resistance. If you are only interested in knowing the speaker impedance rating this is good enough. The DC resistance will typically be a little lower than the rated impedance. A typical 8 ohm speaker has a DC resistance of about 6.5 ohms. If you are interested in crossover design, you need to know much more about the speakers impedance. You need to know magnitude and phase across frequency. To measure this you need more advanced tools than a simple ohm meter. In this video, ARTA will be used. (A link is near the end of the video). Arta is also used to measure frequency response. To design a crossover you need to know the frequency response and impedance curve of all the drivers in the system. Arta can do all the measurements.
