Ingredients: 2 cups Idli Rice 1/4 cup Urad Dal 1/4 cup Lukewarm Water 2 tsp Sugar 1 tsp Instant Yeast Salt to taste Oil (for greasing idli moulds) Method: 1. *Soaking:* Rinse and soak *idli rice and urad dal* together in water for **4–5 hours**. 2. *Yeast Activation:* In a small bowl, mix **1/4 cup lukewarm water**, **2 tsp sugar**, and **1 tsp instant yeast**. Let it rest for *10 minutes* until it becomes frothy. 3. *Grinding:* Drain the soaked rice and dal. Grind them together using minimal water to make a **thick, smooth batter**. 4. *Mixing & Whisking:* Add the activated yeast mixture to the batter. Whisk the batter in *one direction* for about *10 minutes* to incorporate air. Cover and let the batter ferment for *2–3 hours* in a warm place. 5. *Steaming:* After fermentation, add salt to taste and gently mix the batter. Grease idli moulds with a little oil. Pour the batter into the moulds *till 3/4 full* (to leave space for rising). Steam in an idli steamer on medium to high heat for about 10 minutes**. 6. *Check & Cool:* Insert a toothpick to check doneness—it should come out clean. Let the sannas cool, then demould gently.
