First, make the sponge cake. Mix eggs, sugar, and honey in a bowl. Heat over a double boiler while whisking until thick and fluffy. When the batter drops, it should leave a ribbon-like trail that doesn't immediately disappear. 2. Sift the cake flour in batches and fold gently until no dry flour remains. Heat the whipping cream to about 40°C (104°F) and fold it into the batter until well combined. 3. Pour the batter into the cake pan and bake. Once done, invert the cake and let it cool completely. Slice horizontally when cooled. 4. For the sugar syrup, bring sugar and water to a boil, then add brandy. For the cream filling, whip together whipping cream, mascarpone cheese, and sugar until stiff peaks form. 5. Slice strawberries and place one cake layer on a turntable. Brush with sugar syrup, spread a layer of cream, arrange sliced strawberries, add another layer of cream, then top with the second cake layer. Repeat the process. Once assembled, refrigerate for 3 hours. 6. Remove from refrigerator, pipe decorative cream swirls using a piping tip, add Christmas cake toppers for decoration, and enjoy!
