Episode 1: Cherry wood smoked beef shin cooked over the top of ragu and served with pappardelle. This is my version of a take home dinner kit I had from Padella (check out www.padella.com), beef shin was slow cooked on the Kamado Joe for hours above the ragu to infuse the smoke in the beef, and the fat and juices from the beef render into the sauce. The beef is then pulled, the sauce blended and sieved before serving with pappardelle and a good helping of parmesan. Absolutely amazing cook!
