Afternoon Tea Fruit Loaf, Thai Boxer Cookies & Art Gallery Bento Cakes Afternoon tea was invented for people who secretly wish every meal could be dessert, and this episode is my love letter to that tradition. Light cakes, good company, and just enough indulgence to feel like a treat. We start with a zesty fruit loaf designed to sit proudly at the centre of any proper high tea. Packed with citrus, mixed fruits, orange blossom water and topped with jewel-like glacé fruits and pistachios, it looks almost too pretty to slice. Almost. Then I swap the tea stand for the boxing gym. Our Bake Club this week is a group of professional Thai boxers and trainers who unwind by baking together. They bring me their “healthy” chocolate cookies, and while I love the chew and the texture, I can’t resist pointing out the tiny problem of there being almost no chocolate in a chocolate cookie. Luckily, they’re good sports, and we head into the kitchen for a masterclass in energy-packed breakfast muffins and protein-rich oat and raisin cookies that actually fit around training. Finally, I’m asked to create a bespoke afternoon tea for a contemporary London art gallery. Instead of cucumber sandwiches and scones, I design individual bento-box tea trays inspired by modern art: clean lines, graphic colours, and petit fours that look like tiny edible sculptures. With Warhol-esque prints, glossy finishes and bold flavours, the cakes become part of the exhibition.
