Healthy doesn’t have to mean boring — and in this episode of Baking Mad, I’m proving just that. We begin with a bake that’s perfect for breakfast: courgette muffins made with wholemeal flour, honey, oats, and roasted seeds. Light, wholesome, and beautifully moist — the ideal way to start your day. Then I meet a group of mums from Kent who love to bake for their families but want to cut back on sugar and dairy. Their healthy lemon and lime cheesecake has all the right intentions — though not quite the right strawberries! Still, I’m impressed by their passion and creativity. Later, I head to Stoke Mandeville Stadium to meet the London Wheelchair Rugby Club, where I swap the whisk for a rugby ball and bake them a well-earned treat: my apple crumble cake with toasted hazelnuts and a splash of Calvados. Perfect for refuelling after training. Back in the kitchen, I host a masterclass on creating a celebration cake without dairy or eggs — a glossy chocolate and peppermint showstopper made with soy cream ganache, rich dark sponge, and glittering chocolate decorations. Proof that healthy can still be heavenly.
