Welcome to Mak's Cookbook! This week we teach you how to make Salt and Pepper Chicken, prepared to achieve that delicious flavour of your much loved takeaway! Makes ~32 pieces Ingredients: 300g chicken breast For the marinade: ¼ tsp salt ⅛ tsp sugar ⅛ tsp chicken powder ⅛ tsp five spice powder ⅛ tsp white pepper ⅛ tsp garlic powder 1 tbsp Shao Xing wine ½ tsp light soy sauce ½ tsp sesame oil ½ beaten egg 4 tbsp potato starch roughly 140g potato starch (to coat chicken) For the toppings and flavouring: 2 garlic cloves (crushed) 1 spring onion stalk 1/10 green pepper 1/10 red pepper 1/10 yellow pepper ½ fresh chilli ⅙ onion dash of Shao Xing Wine ¾ tsp salt and pepper powder (watch our video here on how to make: • How to make Chinese Salt and Pepper Seasoning ) ¾ tsp coarse black pepper dash of sesame oil Instructions: 1) Prepare the chicken 2) Marinate chicken with the ingredients listed above (from salt to potato starch) 3) Mix and then coat the chicken in potato starch 4) Heat oil in a wok to 180°C and deep fry for 1.5 minutes 5) Take chicken out and prepare for second fry, either in air fryer for 8 minutes at 200°C or in oil for 1.5 minutes again For seasonings and toppings: 6) Heat up wok and add oil 7) Add the ingredients listed above (from garlic to onion) 8) Add a dash of Shao Xing wine 9) Stir fry for a bit before then adding in the fried chicken 10) Next, add in the salt and pepper powder and coarse black pepper 11) Add a dash of sesame oil 12) Finished! #MaksCookbook #saltandpepperchicken #chineserecipe #cookingchannel
