Stir until the sugar dissolves, cover with cheesecloth or a clean cloth, and let it sit at room temperature for 24 hours. 3. Every day for 5 days, add 25 g of sugar and 25 g of ginger. This only takes a few minutes. 4. After 3 days, the mixture will become fizzy – a sign that it's ready to use.
