If you prefer white marshmallows can omit vanilla essence and food color If you prefer more sweet 1/4 -1/2 cup cornflour can be replaced by powdered sugar/icing sugar Make sure to not to over beat,it cause rubbery marshmallows and it will set before spreading Under beating can cause gelatin separates from sugar It won’t give perfect set marshmallows Use good quality color.thin water based color will make mixture watery.if u use powdered color mix it with vanilla essence and add to the mixture.it will help to mix evenly without over beating for each cutting make sure to dip your knife with cornflour.it will prevent from sticking. Using a small knife will helps to cut small pieces easily. Store in airtight containers.
