INGREDIENTS • 2 tbsp butter • 1 tbsp olive oil • 2 chicken breast cut in half lengthwise so that you have 4 pieces • 1-2 cloves garlic minced • 1 shallot diced • 1 cup orzo • 1/4 cup dry white wine (can substitute for cooking white wine) • 2 cups chicken stock (can substitute for bone broth or water) • 1/2 cup pumpkin puree • 1/2 cup grated parmesan cheese • 4-5 fresh sage leaves • 1-2 tbsp fresh chives chopped • 1 tsp fresh black pepper • 1 tsp salt • 1 tsp garlic powder Instructions: 1 Prepare the Chicken: Take 2 chicken breasts and slice them in half lengthwise to create 4 pieces. Season both sides with salt, pepper, and garlic powder, then gently massage the spices into the chicken. 2 Sear the Chicken: In a 12-inch skillet, heat olive oil over medium heat. Place the chicken in the skillet, seasoned side down. While it sears for 2-3 minutes, season the other side with salt and pepper. Flip when golden brown, and cook for another 2-3 minutes. Remove from the pan and set aside covered. 3 Sauté Aromatics: Add the butter to the skillet. Sauté the minced garlic and shallot until fragrant, about 1-2 minutes. Then, stir in the orzo, letting it toast slightly to absorb the flavors. 4 Deglaze and Simmer: Pour in the white wine to deglaze the pan, scraping up any browned bits. Next, add the chicken stock, pumpkin purée, and a pinch of salt. Stir until everything is well combined, and bring the mixture to a gentle boil over medium heat. 5 Creamy Orzo: Once the orzo begins to bubble, reduce the heat to low. Stir in the Parmesan cheese and sage leaves, then cover the skillet and let the orzo cook until it becomes creamy and rich, about 5-7 minutes. 6 Finish Cooking the Chicken: When the orzo is almost fully cooked but still has some liquid, return the chicken to the pan. Cover the skillet again and let the chicken cook for 3-4 minutes, or until it reaches an internal temperature of 165°F. 7 Serve: Remove from heat, take out the sage leaves, and serve with fresh chives on top.
