The vanilla cheesecake is made from 4 ingredients: cream cheese, heavy cream, sugar and, of course, vanilla. It is super easy to make, delicious and refreshing, with a sweet and tangy flavour! Ingredients: -150g digestive biscuits, crushed -50g melted butter -300ml heavy cream -600g cream cheese -⅔cup sugar -1tsp vanilla paste -6 kiwis -1 gelatine leaf -½ cup cold water -½ cup sugar -kiwis or blueberries for decorating. Directions Mix together the biscuits and butter, directly in the tin. Press down firmly with a spoon or a glass. Then whip the cream, add to that the cream cheese, sugar and vanilla paste. Pour it over the biscuit base and refrigerate. Blend the kiwis, be careful not to overblend them. The seeds will turn the mixture in a brownish one. We don't want that! Add the gelatine leaf to the cold water and let it sit for 5 minutes. Then squeeze it and add that to a pan with kiwis and sugar. Cook for 4-5 minutes. Let it cool down, and pour it over the cheesecake. Decorate as you prefer. Chill for a couple of hours. That's it! Enjoy!
