Add sliced onions and garlic to a mason jar and set aside. 2. Add vinegar, water, sweetener, peppercorns, and salt to a sauce pot 3. Place the sauce pot on high heat. Stir to dissolve salt and sweetener. Let boil for 3-5 minutes. 4. Strain the peppercorns (optional). 5. Add liquid to the onions. Place the lid on the jar and let come to room temperature (I like to flip upside down halfway through cooling). 6. Place in the refrigerator for 24 hours.
