Kerala CHEMBA PUTTU ||Soft, spongy, healthy chemba puttu recipe (with matta boiled rice) || Perfect recipe for home || Puttu recipe with out soaking the rice powder and without using store bought puttu powder || Instant Chemba Puttu Recipe (This is an instant puttu recipe which is very healthy and is all day soft which you can make at home without using store bought rice flour or without wetting the rice flour as usual. Our maternal house used to follow this recipe for puttu making, since my childhood. Gradually we evolved to powder the raw rice in the flourmills and then roast it to make puttu. Then we got advanced to buy the packet flour from the store. So here I share that recipe; so why don’t you also adopt this healthy and easy recipe at home. This is made with Matta boiled rice (here I used palakkadan double boiled) which is full of bran and so is healthy) Ingredients Matta double boiled rice - 2 cups Grated Coconut - 1-2 cups (as needed) Salt - to taste Method of preparation Wash and soak the rice overnight with enough water. Drain the excess water from the rice. Make sure the rice doesn’t dry out at all but any gutted water should be removed from the rice keeping the rice just wet to grind. You can either use a good sieve or a clean cloth for the above process. I have just used a adequately holed sieve here. Grind well the rice in the mixer jar to make it to a coarse product like the puttu powder. Don’t worry that the rice will be lumped up like the store brought powder. No lumps can be formed here but make sure the rice is just wet enough only and don’t grind beyond the requirement. Add the flour in a bowl. Add salt to taste and mix with the hand itself to spread the salt evenly in the flour. Here we don’t have to soak the rice flour with water as we normally do for puttu making. Just make the puttu as it is. Take a puttu kutti (mould), insert the sieved metal plate and add a tbsp. of grated coconut and then the rice flour and again the grated coconut and again rice flour and finally with the grated coconut to finish. Close with the lid and steam the same, keeping on the puttu kudam half filled with water, for 3-4 minutes. Wait for the first steam to come out through the top of the kutti, and then wait for 1-2 min after strong steam comes out of the puttu kudam. Very soft, tasty and healthy puttu is ready to be plated with the kadala curry, pappadam and pazham, egg roast or any side dish of your choice. Tips: 1. If you find any difficulty in grinding the rice in your small mixer jar (I haven’t faced problem any time), keep the drained and soaked rice in a closed container in the freezer for 1-2 hours and then grind. You can easily grind to the desired consistency. This is a very useful tip for you. 2. Always make sure that you add the salt just for the taste, since this is boiled rice flour, this needs very less salt to taste than the store bought puttu flour. So always expect the less.
