Peel and chop the garlic and the onion. Peel the carrots and slice them. 2. Heat a generous drizzle of olive oil in a large pot over medium heat. Sauté the garlic and onion until soft and lightly golden. 3. Add the carrots and cook for a few more minutes, stirring, so they blend well with the sofrito. 4. Add the potatoes, peeled and cut into medium-sized chunks, the bay leaves, and enough water to cover everything. 5. Season with salt to taste and let it cook over medium heat for about 20–25 minutes, or until the potatoes are tender. 6. Once the stew is cooked, add the chickpeas, stir well, and cook for another 5 minutes so they heat through and absorb the flavors. 7. Adjust the salt if needed and remove from the heat.
