This simple recipe comes together quickly and is much healthier than pork sausage. The leaner the meat, the more protein it contains. Ground turkey makes the perfect high protein breakfast sausage. Use spices and some olive oil to give the breakfast sausage taste. Recipe: 3 pounds ground turkey 1 Heaping Tablespoon ground sage 1 1/2 teaspoons salt 1 1/2 teaspoons thyme 1 1/2 teaspoons garlic powder 1/2 teaspoon oregano 1 1/2 teaspoons onion flakes (optional) 1/2 teaspoon smoked paprika (optional) 1/2 teaspoon red pepper flakes (optional) 3 Tablespoons olive oil Maple syrup, brown sugar or sweeter of choice is optional 1. Add all ingredients to a bowl and mix by hand until well incorporated 2. Refrigerate for one hour or overnight. (The seasonings have time to flavor the meat if left to sit but if time is not available, you may fry these right away.) 3. Preheat skillet to medium high heat. Make into balls then smash into patties and place in hot skillet. 4. When the patties are slightly brown around the edges, flip. 5.
