A hearty and cozy family dinner made with tender chicken, golden mushrooms, and soft potatoes baked in a rich sour cream sauce. This dish combines classic Eastern European flavors with an easy American-style preparation. Perfect for meal prep, cold evenings, and anyone who loves comforting creamy recipes. This dish is creamy, filling, and perfect as a main course. It reheats beautifully and stays fresh in the refrigerator for up to 4 days. ✅ Ingredients (8–10 servings): Potatoes – 12 medium (about 1.5 kg / ~10 cups diced) Chicken (breast or thigh) – 400 g / about 3 cups diced Mushrooms (white button, chanterelles, or porcini) – 400 g / about 5 cups sliced Sour cream or half & half – 500 g / 2 cups (room temperature) 1 large onion (about 150 g) 2 large carrots (about 200 g / 1.5 cups shredded) 2 tbsp cooking oil (for chicken and vegetables) 1 tbsp butter (for mushrooms) Salt – to taste Black pepper – to taste ✅ Instructions: Peel and cut potatoes into chunks. Boil in salted water until tender, then drain. In a Dutch oven or deep skillet, melt butter and cook the sliced mushrooms until all moisture evaporates and a golden crust appears. Remove mushrooms. Add cooking oil and cook diced chicken until browned and fully cooked. Add chopped onion, sauté until soft, then add shredded carrots. Return mushrooms to the pot. Stir in warm sour cream or heavy cream (IMPORTANT: room temperature is a must to prevent curdling). Season with salt and black pepper. Simmer for 7–10 minutes on low heat. Add the boiled potatoes, gently mix everything together. Transfer to a preheated oven (375°F / 190°C) TURN OFF the oven and let the pot sit for 10–20 minutes to let the flavors fully combine.
