It's fresh pea season! try out this delicious toast with minty flavored pea mash. You can get fresh peas at grocery stores like trader joe's and whold food. Hope you would enjoy this recipe! Ingredients: 2 Garlic clove sliced 2 cups shelled fresh peas 2 tbsp fresh lemon juice and some lemon wedges for serving 2 tbsp mint minced 2 tbsp extra-virgin olive oil 1/4 tsp aleppo pepper (highly recommended) or crushed red pepper 4-5 slices ciabatta or sourdough bread, toasted salt pepper Instructions Add pea, garlic, 1tbsp oil, 1/2 cup of water and 1/2tsp salt in a small saucepan. bring to boil in medium heat and cook for another 10-12 min until peas are tender, stir occasionally. Drain the peas into a bowl and reserve cooking liquid. add lemon juice, mint, Aleppo pepper and 1tbsp oil in the pea mixture. use mortal and pestle or spoon to mash the pea mix until forms paste ( you can also use food processor and pulse into paste). Add in reserved cooking liquid by spoonful to make the mixture spreadable if it’s too thick. Season with 1/4tsp salt, 1/4tsp pepper or more to taste. you can also add more lemon juice if desired. Spread the pea mash onto the toasted bread. finish the toast with some olive drizzle, squeeze some fresh lemon wedges along with sprinkling Aleppo pepper on top.
