Winter months are perfect to serve oysters. Be sure to buy small sized oysters for this dish. It is important to wash the oysters several times to remove all impurities. Using grated radish will help not only to clean the oysters but also make them taste fresh. It is important to drain all excess water from the oysters before serving. ✔️Ingredients 200 gram of fresh oysters 500 gram of radish 1 teaspoon of fine gochugaru 1/4 lemon 3 stalks of thin green onions Ponzu sauce (You can make your own ponzu sauce as shown below or you can use store bought ponzu sauce.) ✔️To make ponzu sauce 4 tablespoon of soy sauce 2 tablespoon of mirin 1 tablespoon of freshly squeezed lemon juice 1 tablespoon of sugar 2 tablespoon of yuzu syrup (You can replace yuzu syrup with lemon or other citrus syrup.) ✔️Directions 1. Grate radish and set aside. 2. Mix gochugaru with small amount of grated radish and set aside. 3. Finely chop green onions. 4. Add grated radish to the oysters with water and stir lightly with hand. Repeat the process 2 to 3 times. Rinse in clean water, making sure that each oyster is clean. Drain and make sure that oysters are fully strained of water. 5. Place oysters in a serving plate and pour the ponzu sauce until the oysters are fully covered. 6. Squeeze excess liquid from the gochugaru radish and top the oysters with chopped green onions and a lemon section. 7. For family style serving, sprinkle fine gochugaru, chopped green onions and lemon zest before serving.
