What can I say about spicy octopus? It is one of the most popular Korean food as we believe that it will replenish our strength and energy. There is even a popular story that if you feed octopus to a fallen cow, it will get up with renewed energy. Hence, we feel that we should eat octopus especially when we feel tired and lack strength. There are many different types of octopus in Korea from small one with short legs (쭈꾸미) to medium sized ones with long legs (낙지) to the large ones commonly known as octopus but called 문어 in Korea. It is in season from September to February and depending on its size and shape, the cooking method will differ. It can be eaten in a wide variety of ways, from salted to smoked, grilled and stir fried. You can also eat them raw or lightly cooked in a clear broth. Each region has a different recipe but octopus dishes are most famous in the south western part of Korea, namely Mokpo and Yeosu area. I hope that all of you will try an octopus dish today. Hope it will help you to start the New Year of the Tiger with renewed energy and strength. ✔️Ingredients 4 medium sized octopus, fresh or frozen 1 large green onion 1 medium sized onion 3 chili green peppers 1 red chili pepper 6 Tablespoons of flour 1 tablespoon of salt For the sauce: 4 tablespoon of gochugaru 6 tablespoon of soy sauce 2 tablespoon of minced garlic 1 tablespoon of sugar 2 tablespoon of mirin ✔️Directions 1. remove the fillings in the head and cut out the eyes and mouth with scissors. 2. Clean the octopus with flour and salt. Be sure to rub flour and salt evenly and clean the octopus thoroughly with water. 3. Lightly blanch the octopus in boiling water for 10 seconds. Transfer to cold icy water. Make the sauce and set aside. 4. Prep the veggies : cut the large green onions diagonally, 4 cm in length. Slice the onions and the peppers. 5. Remove excess water from the octopus and cut them into 5 cm in length. As they will shrink when cooked, do not cut them too small. 6. Heat the pan with vegetable oil. First stir in green onions and then add the onions. Once the onions turn color, add the sauce and mix well. When the sauce begins to heat up, add the octopus and make sure the sauce is evenly covered. Finally, add the chili peppers and garnish with roasted sesame seeds before serving. This is a dish that needs to be prepared right before serving.
