Pat the salmon dry with paper towels. Handle Preparation: Cut one side of each salmon portion. Attach butcher's twine, creating handles for easy manipulation. Herb Coating: In a tray, mix fenugreek, paprika, black pepper, savory, and any additional herbs or spices. Coat the entire surface of each salmon portion with the herb mixture, pressing it onto the meat for even coverage. Air-Drying: Use the handles to hang the salmon portions on a wooden stick in a well-ventilated area. Allow them to air-dry for a week, adjusting based on temperature and humidity.
