Vegetables: 1 large Onion (finely chopped) Tadka (Tempering): 2–3 tbsp Oil, 1 tsp Mustard seeds, 1 tsp Cumin seeds, 2–3 Green chillies (chopped). Crunch & Flavor: ¼ cup Raw Peanuts, ½ tsp Turmeric powder, Salt to taste. Garnish: ,chopped Coriander leaves, chopped onian, Lemon juice, and Nylon Sev (optional). Step-by-Step Cooking Instructions 1.Prep the Poha: Place the poha in a colander and rinse under running water for 30–60 seconds. Do not soak it in a bowl or it will turn mushy. Let it drain for 10 minutes. Once damp, sprinkle salt, directly over the poha in the colander and toss gently with a fork to avoid breaking the flakes. 2.Fry the Peanuts: Heat oil in a pan. Add raw peanuts and fry until they turn golden and crunchy. Remove and set aside to keep them from getting soggy later. 3.The Tadka: In the same oil, add mustard seeds. Once they splutter, add cumin seeds, and green chillies. 4.Sauté Onions : Add the onions and sauté until translucent (light pink). 5.Combine: Add the seasoned poha and fried peanuts to the pan. Mix gently using a lifting-and-folding motion to maintain fluffiness. cover the pan with a tight lid, and let it steam on the lowest heat for 2–3 minutes.
