Nut milks have been all the rage in the foodie and health minded market, but they do have drawbacks especially some of the main shelf-stable brands! They also can boast some health benefits, especially if made at home! Pros of nut milk: -A good alternative for dairy protein intolerance, lactose intolerance, or a casein inflammatory response. -Unsweetened nut milks may have lower carbohydrates than dairy milk -Nut milks may have lower calorie density than dairy milk with the exception of coconut milk. Cons of nut milk: -Nuts have limited bioavailability due to their anti-nutrient properties -Nuts are low in protein compared to dairy milk -Nut milk products main contain additives -Nut milk may have higher carbs than dairy milk Recipe for brazil nut milk (6 servings) INGREDIENTS 2 cups brazil nuts 5 cups water 1 tsp vanilla extract generous pinch sea salt optional: 1 Tbsp honey to sweeten INSTRUCTIONS Soak the brazil nuts by covering with filtered water and leaving in the fridge 8 hours or overnight. Strain off the water and place in the blender. Add 5 cups of new filtered water, vanilla extract, sea salt and honey if using. Blend on medium speed until incorporated, then turn up to high and continue blending 2-3 minutes until fully combined. Strain in a nut milk bag or through a fine strainer. Store in glass jars in the fridge for up to 5 days.
