Golgappa Semolina - 1cup (240ml) cup All Purpose flour or maida -2tbsp Salt-1/2tsp Oil -1tbsp Water -10tbsp (normal) For Potato Mix Potato -2small Green chilli-1 Coriander leaves - 1/4cup green moong dal - 4tbsp Onion -1/2 (opt) Salt- Black salt- 2 pinch Chat masala -1/4tsp Chilli Powder -1/2tsp Cumin Powder -1/2tsp Spicy Pani Puthina -handfull Coriander -handful Ginger -1 p Green chilli -2 Lemon -2 tbsp Tamarind water -1tbsp Chat masala -1/4tsp Black salt - Pepper powder or chilli -1/4tsp Cumin Powder -1/4tsp Sweet and Sour Pani Tamarind water - 1/2cup Jaggery -2 chilli powder -1/2tsp Salt- Cumin Powder - 1/2tsp Method Take 1 cup of Semolina/Rava and slightly grind it so we get a fine grains. Empty this to a bowl and add 2 tbsp of maida, salt and 1 tbsp oil mix well. Add 5 tbsp water and mix it and make a dough. Add water if required. Knead the dough for 5 mins. You can put it in the mixi and beat it.it will be easier to knead. Now keep it to rest for 30 mins. Close the dough in a cloth. Filling- take a mashed boiled potato. Add boiled green mong daal to the mashed potatoes. Then add some coriander leaves and onion finely chopped and green chilly . add some cumin and chilly powder. Add chaat masala and black salt. Mix well . then add salt. Check the spices and sourness. Adjust accordingly. Teekha pani- grind puthina , coriander , ginger, green chilly and lemon juice. Grind it with water. Sieve it. Then add a tbsp. of tamarind juice. ½ tsp cumin powder, pepper/chilly powder, black salt, chaat masala. Mix well add 1 glass of cold water. Check the salt and keep it in the fridge. Khatta meetta pani – take some tamarind juice in a bowl. Add some jaggery syrup , salt , ½ tsp cumin powder, pepper/chilly powder, black salt, chaat masala. Adjust it according to your preference. Keep it in the fridge. Now take the dough and divide it into 3 portions. Dust some maida on the flat surface. Then roll a big round roti . with a cookie cutter you can make small round poori. Then we can fry it. The thickness should be around like a 1 rupee coin. Never keep two poori on top of each other. Take a wok and add oil. Now fry the poori . on low flame we should fry it. It will be puffed up well and golden in shade. Remove from fire. For serving - make a small hole in the center. Add the potato masala. Dip it/with a spoon take the teekha pani and the khatta meeta pani into the poori. Eat it immediately. Enjoy !!
