Qutab (gutap) is a traditional dish of Azerbaijani cuisine – a flat cake of unleavened low-calorie dough stuffed with juicy greens and cheese or cottage cheese. For cooking qutabs you can use any fresh greens at hand. Some even add fresh nettle and if you decide to add it, scald it before. Qutabs are fried on a dry pan until golden, then buttered, stacked up and served with sour cream. Greens remain juicy and do not lose its taste, cheese melts lightly and all that fill your house with a tender aroma. You will need just 30-40 minutes to cook such qutabs, so let’s start. Ingredients: • semi-soft or pickled cheese – 600 g • scallion – 70 g • spinach – 70 g • cilantro – 70 g • dill – 30 g • mint – 20 g • lettuce leaves – 70 g • salt – to taste • ground black pepper – ½ tsp • butter – 50 g Dough: • wheat flour – 500 g • salt – 1 tsp • water – 300 ml You will need: • rolling pin • bowl Preparation: 1. Add the wheat flour into a bowl, make a deepening in the centre, add the water and salt into it and knead smooth dough with hands or a dough mixer. As soon as it stops sticking to hands the dough is ready. 2. Leave aside the dough for 20 minutes. Meanwhile chop up all the greens and grate the cheese coarsely. Lay all the greens and cheese into a big bowl, add salt to taste and the ground black pepper, toss well. If you take some pickled variety of cheese, e.g. suluguni cheese, add then less salt or do not add any. 3. Divide the dough into small parts about 50 g each. Roll out each into a round and thin cake about 1 mm thick. 4. Lay 2 tbsp of filling on one half of the cake and spread evenly, cover with the second part of the cake, press lightly to let the air escape, join the edges of the qutab well and cut off the extra dough. 5. Heat a pan, reduce the heat to medium and bake the qutabs on dry for 2 minutes on each side until golden crust. 6. Brush the qutabs with some melted butter and stack up.
