My cousins Siemens steam oven had never been used since he moved in. For well over 12 months it has silently waited for a socially distanced rescue! Steam ovens are a fantastic bit of kit , every professional kitchen has one.... Why? Because they work so well, especially with delicate fish and vegetables. I ran the descaling function and rinsed the steam oven before using it, and then showed them how anyone could cook a delicious, healthy meal in 8 minutes. I chose a beautiful fresh Irish Hake that I filleted down to a plump skinless fillet. Once trimmed and pin-boned, I generously sprinkled Maldon salt all over the fish and put in the fridge for 30-40mins. Top Tip** get your fishmonger to skin and pin bone your fish, unless you want to do it yourself. This salting firms up the soft Hake, making it much nicer texture to eat. The vegetables (carrots, tender stem broccoli) are all cut to a similar thickness so they cook evenly and quick. And as wild 3 cornered leeks are in season we foraged a bunch for lunch. Adding a smashed bulb of lemongrass, limes and coriander brings another aromatic dimension to the dish, without overpowering the delicate Hake flavour. Top Tip** Place a small piece of baking paper under each piece of fish to stop it sticking to the pan.
