Trifongo with Carne Frita is the first installment in our newest cooking series entitled "Afro Latin Cuisine!" Many Latin and Hispanic countries have various cultures that help shape their cuisine, like the African influence, but you don't hear much about that story or history. I, for one, am proud of my Afro-Latino heritage! My hope is that thid series will inspire many others to embrace their history. Trifongo is a version of the famous Caribbean dish Mofongo, made with indigenous green plantains, but Trifongo also includes ripe plantain and yuca for the trifecta. Trifongo is prepared the same way as mofongo, which is rooted in African culture! Mofongo comes from the Angolan technique of mashing starchy foods. Combined with Taino and Spanish products, Mofongo and Trifongo have become a Caribbean staple, especially in Puerto Rico and the Dominican Republic. I serve this Trifingo with Carne Frita (fried pork shoulder).
