출시 전부터 우지라면의 부활이라는 이슈로 주목받는 라면, 삼양 1963입니다. 아시는 분들은 아시지만 과거에 우지파동이 일어났고, 그로 인해 삼양은 존폐위기를 겪었을 정도로, 삼양에게는 트라우마같은 사건이 있었습니다. 이번에 나온 삼양의 1963은 네이밍과 재료만 봐도 그 당시의 한, 억울함 같은 것을 설욕하고자 하는 의지가 강하게 느껴집니다.ㅎㅎ 그만큼 이슈몰이도 많이 됐었고, 맛에 대해 많은 평가들이 난무하고 있기도 한데요, 그 중에서도 특히 후첨스프의 역할이 어딘가 애매하다는 이야기들도 많은 것 같습니다. 제가 느끼기에도 분명 후첨스프의 쨍한 맛은 좋으나, 우지라면이라는 별칭에서 볼 수 있듯이 소기름 특유의 풍미가 좀 더 강하길 바라는 사람들에겐 그 맛이 묻히는 부분을 아쉬워할 수 있었을 것 같다는 생각이 들었습니다. 그래서 저는 그 우지의 향을 좀 더 강화해 보고자, 차돌박이를 추가해 더욱 묵직한 국물맛을 내보고자 하였습니다. Just from the name and ingredients alone, this new Samyang 1963 feels like the company’s determination to redeem the frustration and regret from that era. Haha. Because of that, it’s been a hot topic, and there are tons of reviews about its flavor. Among them, many say that the role of the finishing seasoning powder feels a bit ambiguous. I felt the same—while the sharp flavor of the finishing powder is good, those expecting a stronger beef tallow aroma (as the nickname “beef tallow Ramyun” suggests) may find that the powder mutes that unique flavor. So to enhance that beef tallow aroma, I added beef brisket to create a deeper, richer broth.
