They are super fun to break apart too (I can't stop, send help lol) I am super excited to share this with you guys so I hope you guys can try making these at home! ❤️ Recipe (for 6 buns) Sweet Potato Filling 350g sweet potato 10g butter 10g sugar 20g condensed milk 1 egg yolk Cut sweet potatoes into chunks then steam sweet potatoes for 20 minutes until soft. Peel off skin then mash with a fork Put mashed sweet potatoes into a small pot then add butter, sugar, condensed milk, and 1 egg yolk Heat on low heat while stirring until it becomes a ball and doesn't stick to the pot Let filling cool Dough 85g water 23g sugar 35g butter a pinch of salt 140g tapioca starch 12g bread flour 23g glutinous rice flour 1 egg *Purple sweet potato powder In a small pot add water, sugar, butter, and a pinch of salt Heat mixture till it boils, then turn off heat Mix in tapioca flour then turn on low heat Heat till dough forms a ball and does not stick to the pan Let tapioca dough cool Once tapioca dough is cool enough to handle, mix in bread flour, glutinous rice flour, and 1 egg. Knead till the dough forms a smooth ball (it will be very sticky in the beginning, flour your hands so that it is more manageable) Assembly Separate dough and filling into 6 (each about 50g). Roll out dough into an oval shape then shape filling into a rugby shape. Place filling onto dough then pinch sides to seal.
