A rich and savory apple tart with sharp cheddar and fresh rosemary Ingredients: 4 tablespoons butter, divided 1 tablespoon olive oil 1 large or 2 small yellow onions 3/4 cup sour cream 2 dijon mustard packets (2 teaspoons) 1 honey packet (1 teaspoon) 1 sheet puff pastry, thawed in the fridge 1 egg 1 cup shredded sharp cheddar cheese 2 pink lady apples 2 sprigs of fresh rosemary 2 tablespoons fresh parsley, chopped Salt and pepper Steps: 1. Slice the onion into thin half-moons. Heat a large skillet over medium heat and add the olive oil and 2 tablespoons of butter. 2. When the butter has melted, add the onions and season with salt and pepper. Sauté the onions, stirring occasionally, until they reach a deep brown caramelized color, about 35 minutes. Set aside. 3. Preheat the oven to 400 degrees F. 4. Mix together the sour cream, dijon mustard and honey in a small bowl, and season with salt and pepper. 5. On a lightly floured surface, roll out the puff pastry into a 12x14 inch rectangle and transfer to a parchment-lined sheet tray. 6. Crack the egg into a small bowl and whisk. Brush the edges of the puff pastry with the egg wash then fold in 1/2 inch around all sides to form an edge. The egg wash will help the edge of the crust stay together. Use a fork to poke holes around the center of the dough. 7. Spread the sour cream mixture evenly across the puff pastry. Spread the caramelized onions in an even layer and sprinkle with cheddar cheese. 8. Cut the apples into thin slices and arrange them on top of the cheese. Brush with 2 tablespoons melted butter and sprinkle with rosemary leaves. 9. Brush the edges of the crust with egg wash and place the tart in the oven. 10. Bake for 20-25 minutes, until the pastry is puffy and golden brown.
